Jessie's Ham and Asparagus Easter Strata

My sister Jessie, one of three, lives in Colorado and sent me this recipe for Ham and Asparagus Strata. It reminds me of the famous scene in the "Family Stone" where Sarah Jessica Parker drops the whole pan of strata on the floor.

Ham-Asparagus Strata--

Prep: 25 Min, Chill: 2-24 hrs,


Bake: 50 min.
OVEN 325

This cheesy strata makes a great brunch dish because you can assemble it the night before and bake it in the morning.

(I double it for a 9X13 pan).

4 English muffins, torn or cut into bite-size pieces

1 c cubed fully cooked ham (6 oz)
1/2 or a 10-oz package frozen cut asparagus or frozen cut broccoli, thawed and well-drained

6 1-oz slices process Swiss cheese, torn (or whatever swiss you like)

4 beaten eggs

1 3/4 c milk

1/2 c dairy sour cream

2 T finely chopped onion

1 T Dijon-style mustard

1/4 t caraway seed (optional--I've never used them)

1/8 t pepper

1. In a greased 2-quart square baking dish layer HALF of the English muffin pieces. Top with the ham, asparagus or broccoli, and cheese. Top with the remaining English muffin pieces.


2. In a mixing bowl combine the beaten eggs, milk, sour cream, onion, mustard, caraway seed (if desired) and pepper. Pour over the layers in dish.

Cover and chill in refrigerator for 2-24 hrs.

3. Bake, uncovered, in a 325 oven for 50-55 min. or till a knife inserted near the center comes out clean.

Let stand for 5-10 min. before serving.

Makes 6 servings.
